Description

The Manager Dietary Services is responsible for managing all activities of personnel engaged in providing safe, sanitary, quality food products for all patient and non-patient services (food preparation, patient meal tray assembly, ware washing and overall sanitation/regulatory compliance).  Responsible for the purchasing, storage, distribution and inventory of all food/food related supplies.  Responsibilities include analyzing and restructuring departmental processes and services in relation to quality outcomes and cost control; participation in the development of the departmental budget and business plan; the development, utilization and maintenance of the computerized food service system; cost effectiveness and productivity/staff utilization reporting; participation in process improvement and project management for attaining departmental goals and objectives. 


This is a shared position with SLMC, HFMC, SMMC

Qualifications

REQUIRED QUALIFICATIONS:

 

Knowledge of sanitation, quantity cooking techniques, recipe standardization procedures, portion control, purchasing, inventory, menu development, computer utilization, quality assurance/improvement, nutrition, diet therapy, and other food service practices as normally acquired through completion of a bachelor’s degree with emphasis on food/nutrition or related field.

 

 

A minimum of 5 years direct food service related leadership experience necessary to demonstrate full knowledge of complex food service processes, managerial practices and analytical skills needed to properly manage food service operations.

 

State of Illinois Department of Public Health Sanitation Certification required -  (must obtain within 6 months of hire).

 

 

 

PREFERRED QUALIFICATIONS:

 

Bachelor Degree in Food Service Management or related field.

 

5 years or more direct leadership experience in patient or commercial food services.
